The History of Recipes
We can read the history of written recipes back into distant history, certainly as far back as ancient Egypt, and maybe further still. Interesting though that is, in the main part, these old cook books were just very basic hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered so far, according to experts are a few stone tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Later on, in Roman times around 25BC a man called Apicius compiled some documents describing recipes cooked by wealthy roman citizens. In his works, he describes how the meals were separated into starters, main course and desserts, a style of dining still practiced today. Aspicius also recounts how the early Romans were skilled in the use of a good variety of aromatic flavors, including a few you will know for example basil, mint and dill. For the next few years, the wealthy families of Europe competed with each other to lay on the most exotic meals, and because of this the best cooks and their recipe collections became highly prized. However, it was during the nineteenth century that fine cooking and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and writing down recipes of the day. By the advent of the twentieth century, recipe books were in high demand, mostly due to higher levels of literacy, people having more leisure time and disposable income. |
