The History of Recipes
Written cooking instructions as a concept can be tracked back into the distant past, in fact as far into history as the early Egyptians, and possibly even further. However, in the main part, these ancient records were just very basic hieroglyphic or cunieform recipes for preparing food.
Later on, in The time of the romans 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals were split into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. Aspicius also describes how the cooks of his times were skilled in the use of a wide range of herbs and spices, including many that are still in use today for example bay, fennel and parsley. Over the succeeding few centuries, the powerful families of Europe strove to serve up the best banquets, and because of this chefs and their recipe collections increased in prestige. Nevertheless, it wasn`t until the 1800s that cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, verifying, and recording the recipes of their peers. When we get to the 20th century, recipe publications were greatly in demand due to higher levels of literacy, more spare time and a general increase in wealth. |
