The History of Recipes
We can trace the history of meal recipes way back into the far past, in fact as far into history as pharonic Egypt, and quite possibly further than that. Having said that, in the main part, these old records were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe in existence, according to historians are a few ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. Later on, in Roman times around 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes enjoyed by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, something we still use today. Aspicius tells us how the ancient chefs made use of a good variety of spices and herbs, including some familiar names like thyme, fennel and dill. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from Arab countries, including spices like basil and rosemary. The introduction of these new foods and spices was responsible for a torrent in recipe books, most of which are now in private libraries. For the next few years, the upper-class families of Europe strove to serve up the most extravagent banquests, and as a consequence, the best chefs and their collection of recipes were much in demand. Notwithstanding that, it was during the nineteenth century that cookery and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated years of their lives to collecting, testing, and writing down recipes to help cooks of their time. The introduction of the TV brings us TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes such as those found on this recipe site. |
