Lemon Afternoon Delight Recipe

Ingredients

1 package (8 oz) cream cheese, soft.
1/2 cup hellman's (r) real mayonaise
1/2 cup sugar
3 eggs
2 tsp grated lemon rind
1 tbsp lemon juice (opt)
1 tsp vanilla
1 graham cracker pie crust


Directions

1>. In a large bowl with mixer at medium speed beat cream cheese and
real mayonaise until smooth; gradually beat in sugar. 2>. Beat in
eggs, one at a time; beat in rind, juice and vanilla. 3>. Pour into
pie crust, place on cookie sheet. Bake at 3500F oven 30 to 35 minutes
or until set. Chill 4 hours.

The History of Recipes

We are able to follow the history of `recipes` far back into the distant past, certainly as far back into recorded history as the early Egyptians, and maybe even further. Having said that, these, early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.

The truth of the matter is, the oldest recipe discovered so far, according to food historians are some ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated.

Later on, in The time of the roman empire around 25BC a roman called Apicius created a collection of scripts detailing recipes prepared by his fellow Romans. He tells us how the roman meals were divided into hors d`oeuvre, main meal and desserts, something we still use today. Aspicius recounts how the cooks of Roman times were skilled in the use of many spices and herbs, including a few that will be familiar to modern chefs for example thyme, mint and dill.

As we move on, there were a couple of recipe books dating from the 1300s - a cookery book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are unconnected to the indian curry that is familiar to us all today, but instead recipes for the types of food prepared for the rich and wealthy people of that period.

Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including spices such as coriander, parsley, and basil. These new culinary innovations caused an eruption in recipe books, many of which are kept safe in private collections.

During the following few hundred years, the upper classes competed to serve the most exotic banquets, and because of this chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collating, testing, and publishing the recipes of their peers.

By the advent of the 20th century, cookery books are highly popular due to higher levels of literacy, leisure time and having more money to spend.
