The History of Recipes
Academics have proved the existence of recipes way back into ancient history, at least as far as the early Egyptians, and possibly even further than that. Interesting though that is, generally, these early recipes were just very basic pictorial instructions for food preparation.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are some tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into The time of the roman empire 25BC a man called Apicius compiled some scripts describing recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the roman meals were separated into hors d`oeuvre, main meal and afters, a style of dining still practiced today. Additionally, he describes how the ancient Romans made use of a good variety of herbs, including a few you will know such as bay, fennel and asafoetida. As our culinary historical trip moves to more modern times we have two interesting books from the 14th Century : one book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Despite their titles, these have no connection with the spicy food that is popular today, but instead recipes for the types of meals enjoyed by the upper classes. In the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the Middle-East, such as basil and rosemary. The introduction of these new culinary ideas prompted an explosion in manuscripts on cookery, many of which are kept safe in private collections. The introduction of television brought us cooking programs and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to search through massive numbers of recipes such as those found on the site you are now reading. |
We hope you enjoy this Lemon Bread (Dak) recipe.
