2 lb broiler-fryer chicken,(2 to
1 3 lb), cut into 8 pieces
1/2 cup lemon juice
1 1/2 tsp salt
1 garlic powder, to taste
1 pepper, to taste
Directions
1. In a 10-inch square, heat-resistant, non metallic baking dish,
place chicken, bone side down. Pour 1/4 cup lemon juice over chicken.
2. Heat, covered, in Microwave Oven 15 minutes. 3. Turn chicken over
and add remaining lemon juice and seasonings to chicken. 4. Heat,
covered, in Microwave Oven an additional 12 minutes or until chicken
is tender.

The History of Recipes
Historians have proved the existance of recipes way back into history, certainly as far as the early Egyptians, and possibly even further. Having said that, mostly, these early records were just very basic pictorial instructions for food preparation.
Interestingly, the oldest recipe found, according to historians is a series of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. As our culinary historical trip moves on a few more years there were a couple of cookery books from the 1300s : one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the spicy food that appears on menues today, but instead recipes for the types of meals eaten by the nobility of the period. During the succeeding few hundred years, the rich and powerful families of Europe competed to lay on the best banquets, and as a result cooks and their collection of recipes were much in demand. Notwithstanding that, it wasn`t until the 19th century the formal cooking and recipe publications became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, verifying, and publishing recipes common in their social group. Like it or not, the introduction of television brings us TV cooks and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to search through thousands of recipes just like those on the site you are now reading. |
