The History of Recipes
It is possible to track the history of written recipes far back into distant history, in fact as far back as the Egyptians, and maybe even further. Having said that, mostly, these ancient recipes were just very simple pictorial instructions for food preparation.
In fact, the most ancient recipe discovered, according to food historians are some stone tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. Later on, in The time of the romans around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes cooked by his fellow Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, a style of dining still practiced today. This early Roman chef describes how the ancient chefs used a good variety of spices and herbs, including a few you will know like basil, mint and dill. For the decades that followed, the powerful and wealthy strove to offer the best banquets, and consequentially chefs and their recipes could command a high salary. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe collections became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collecting, testing, and writing down recipes to help cooks of their time. By the time we get to the 1900s, cook books were greatly in demand due to better eduction, leisure time and having more money to spend. |
