The History of Recipes
We can follow the history of `recipes` way back into the distant past, in truth as far as the early Egyptians, and quite possibly further than that. Interesting though that maybe, generally, these early cookbooks were just simple pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe found, according to food historians is a collection of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into The time of the romans around 25BC a roman called Apicius wrote some scripts which described recipes cooked by wealthy roman citizens. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient Romans made use of a wide range of aromatic flavors, including some familiar names for example thyme, fennel and parsley. Later, in the fifteenth century, people returning from the crusades brought back many new spices and herbs from the Middle-East, including spices such as coriander, basil and rosemary. The introduction of these new herbs and spices caused an increase in manuscripts on cooking, the majority of which are now in private cookery archives. During the next few centuries, the powerful and wealthy houses tried to offer the most exotic banquets, and as a result chefs and their recipes could command a high salary. Even so, it wasn`t until the nineteenth century that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to assembling, trying out, and writing down recipes common in their social group. The revolution that is television gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes just like those on sites such as this. |
