2 tbsp dill, fresh or
1 tsp dill, dried
1/4 tsp nutmeg
2 onions, chopped; sm. onions
1 tsp lemon rind, grated
1/4 cup lemon juice, fresh
Directions
Place chickden in baking dish; sprinkle with lemon rind, onion, dill
and nutmeg. Add lemon juice. Bake uncoverd in 350 degree oven for
about 60 mins., or until done.
MICROWAVE: Bake covered on high about 30 mins.

The History of Recipes
Recipes as an idea can be observed way back into history, certainly as far back into history as pharonic Egypt, and possibly even further than that. In practice though, generally, these ancient cook books were just primitive hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to historians is a series of ancient tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. As we move into Roman times 25BC a roman called Apicius created some scripts which described recipes prepared by wealthy Romans. In his works, he describes how the meals were split into appetizers, entrees and dessert, something that is very familiar to us today. Aspicius tells us how the cooks of Roman times made use of many different herbs and spices, including a few that will be familiar to modern cooks for example bay, mint and dill. Later, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, including rosemary and coriander. These new herbs and spices led to a surge in publications on food, some of which are kept safe in private cookery archives. By the advent of the 1900s, cookbooks are increasing in popularity due to higher levels of literacy, more leisure time and having more money. The revolution that is television gave us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes like those on our web site. |
