The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions far back into distant history, at least as far as early Egypt, and possibly even further than that. However, sadly, these early recipes were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to experts are a few ancient tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Progressing into The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, entrees and desserts, something we still use today. He also describes how the early Romans used many aromatic flavors, including a few that will be familiar to modern cooks such as thyme, mint and dill. For the centuries that followed, the rich and powerful families of Europe strove to lay on the most exotic banquets, and because of this the best cooks and their recipes became highly prized. Even so, it wasn`t until the 1800s that fine cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collating, trying out, and publishing popular recipes of the day. By the time we get to the 20th century, cookery publications are starting to become popular mostly due to higher levels of literacy, people having more leisure time and disposable income. |
