The History of Recipes
Written cooking instructions as a concept can be found far back into history, in truth as far into history as the ancient Egyptians, and possibly even further than that. In practice though, mostly, these early recipes were just very basic hieroglyphic instructions for preparing food.
In fact, the most ancient recipe in existence, according to academics is a collection of ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. Progressing into The time of the roman empire 25BC a man called Apicius assembled a number of documents which described recipes cooked by wealthy Romans. In his publication, Apicius recounts how the meals were split into appetizers, main meal and afters, something we still use today. This early Roman chef recounts how the Romans used many different spices, including a few you will know like basil, fennel and asafoetida. Later on in the 1400s, the Crusaders brought back many new foods and spices from Arab cooking, including spices such as rosemary and coriander. These new spices and herbs led to an explosion in manuscripts on cookery, most of which are kept safe in private cookery archives. By the time we get to the 20th century, recipe books are starting to become popular as a result of more people being able to read, more spare time and having more disposable income. The arrival of television brought us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of the internet, permitting everybody to access thousands of recipes like those on this recipe site. |
