The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into history, certainly as far into history as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, sadly, these early cookbooks were just very simple hieroglyphic or cunieform recipes for food preparation.
As we move into Roman times around 25BC a roman called Apicius compiled a few documents describing recipes cooked by his fellow Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, main meal and desserts, a style of dining still practiced today. He also recounts how the chefs of Roman times used a wide range of aromatic flavors, including a few you will know for example bay, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought us many foods and spices from Arab cooking, such as basil and coriander. These new spices and herbs led to an explosion in books on cooking, many of which still exist in private collections. By the advent of the 1900s, cookery publications are in high demand, as a result of more people being able to read, more free time and having more money. |
