The History of Recipes
We are able to trace the history of `recipes` far back into the distant past, in truth as far into history as early Egypt, and maybe even further. Interesting though that is, these, early cook books were just primitive hieroglyphic or cunieform instructions for preparing meals.
The truth of the matter is, the most ancient recipe found, according to historians are a few ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. As we move into Roman times 25BC a roman called Apicius created a few documents which described recipes enjoyed by his fellow Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into starters, entrees and afters, a very modern way of dining. This early Roman chef informs us how the chefs of Roman times were skilled in the use of many different herbs, including many that are still in use today such as basil, fennel and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many new foods and herbs from the East, including spices such as parsley, basil and rosemary. The introduction of these new culinary ideas led to an outbreak in manuscripts on cookery, most of which are now in private cookery archives. During the next few centuries, the upper classes tried to serve up the most extravagent meals, and as a result chefs and their collection of recipes were greatly in demand. However, it was during the 1800s that cooking and recipe books became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, spent years to assembling, verifying, and recording recipes for their fellow cooks to enjoy. By the advent of the 20th century, cookery books are increasing in popularity mostly as a result of increased literacy, increased leisure time and having more money. The revolution that is television gave us celebrity chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everybody to access thousands of recipes like those on the site you are now reading. |
