MMMMMFRUIT SALAD
3 can Mandarin orange, drained, (11 oz ea.)
3 Grapefruit, pink, peeled, seeded and sectioned
6 Bibb lettuce heads, torn in bite size pieces
MMMMMPOPPY SEED DRESSING
1/4 cup Onion, chopped (to 1/2 cup)
3/4 cup Vinegar, tarragon
2 tbsp Vegetable oil
2 1/2 tbsp Poppy seeds
1 tbsp Sugar
1 tsp Salt
1 tsp Dry mustard
3/4 cup Oil, vegetable
Directions
Combine mandarin oranges, grapefruit sections, and lettuce in a large
salad bowl; toss lightly. Serve with Poppy Seed Dressing.
Poppy Seed Dressing: Combine first 7 ingredients in container of
electric blender; blend well. Slowly add 3/4 cup vegetable oil,
continuing to blend until thick. Pour into a jar with a tight-fitting
lid, and chill. Shake well before serving. Yield: 2 cups
Food Exchange per serving: 1 FRUIT EXCHANGE + 1 FAT EXCHANGE

The History of Recipes
Written cooking instructions as a concept can be tracked way back into antiquity, in truth as far into history as early Egypt, and possibly even further. However, sadly, these early cook books were just simple pictorial, hieroglyphic or cunieform recipes for meal preparation.
During the time of the Roman Empire a roman called Apicius created some scripts describing recipes cooked by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he recounts how the ancient cooks used a good variety of spices and herbs, including a few that will be familiar to modern cooks such as bay, rue and asafoetida. Over the following few hundred years, the powerful and rich competed with each other to serve the most extravagent banquests, and because of this the best chefs and their recipe collections were at a premium. However, it wasn`t until the 19th century that haute cuisine and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to collecting, testing, and publishing recipes for their fellow cooks to enjoy. The introduction of television gave us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing us all to search through thousands of recipes such as those found on this site. |
