The History of Recipes
Academics have traced the existance of recipes back into ancient history, in truth as far back as the early Egyptians, and quite possibly further than that. In practice though, sadly, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
During Roman times around 25BC a man called Apicius created some scripts which described recipes cooked by his fellow Romans. In his publication, Apicius describes how the roman meals were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. He also recounts how the Romans made use of many spices and herbs, including a few that are still present in modern kitchens like thyme, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from the holy lands, including coriander, parsley, and basil. These new culinary innovations caused an eruption in manuscripts on food, many of which are now in academic collections. By the arrival of the 20th century, cooking publications were starting to become popular due to better eduction, people having increased free time and being a little richer. |
