The History of Recipes
We are able to read the history of meal recipes back into antiquity, in truth as far back into history as the Egyptians, and quite possibly further than that. In practice though, mostly, these old records were just basic pictorial recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history are a few stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move into The time of the romans around 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient Romans made use of many different herbs, including some familiar names such as thyme, mint and asafoetida. As we move on, there are a couple of interesting cookery books from the fourteenth century : a book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian food that is served today, but instead descriptions of the types of food served to the nobility of the time. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from middle-east cuisine, including spices like coriander, parsley, basil and rosemary. The introduction of these new tastes caused a torrent in publications on food, the majority of which are now in academic collections. During the next few centuries, the wealthy families of the West tried to serve the best banquets, and because of this the best chefs and their collection of recipes increased in prestige. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collating, verifying, and writing down popular recipes of the day. By the advent of the 20th century, cooking books were increasing in popularity due to higher levels of literacy, people having increased free time and a general increase in wealth. The revolution that is television brought us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to search through massive numbers of recipes like those on the site you are now reading. |
