Directions
1/2 c olive oil
: juice of 1 lime
4 garlic cloves
: peeled, ends removed
1/2 c cilantro -- wash, dry
: fresh ground black pepper
1/4 ts sugar -- to taste
1/8 ts salt -- to taste
In a food processor fitted with a metal blade, combine the olive oil,
lime juice, garlic, cilantro leaves, and black pepper. Process until
smooth. Add sugar and salt to taste. Makes 1/2 cup. Chef Pete

The History of Recipes
Experts have tracked the existance of recipes way back into the distant past, at least as far as the Egyptians, and maybe further still. Having said that, in the main part, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the oldest recipe in existence, according to historians is a collection of tablets in ancient Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Later on, in Roman times 25BC a man called Apicius assembled a few documents describing recipes enjoyed by wealthy Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main meal and afters, a style of dining still practiced today. Aspicius tells us how the Romans used a good variety of herbs, including a few you will know such as basil, fennel and dill. During the succeeding few hundred years, the powerful families of the West competed with each other to serve up the best banquets, and as a consequence, the best cooks and their recipe collections were greatly in demand. Notwithstanding that, it wasn`t until the 19th century that formal cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to collecting, verifying, and writing down the recipes that were being prepared for the better households. Like it or not, the introduction of television brought us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes such as those found on the site you are now reading. |
