The History of Recipes
Written cooking instructions as an idea can be tracked way back into distant history, in fact as far back into history as early Egypt, and quite possibly further than that. In practice though, these, old cook books were just very simple hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts in ancient history are some stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. Moving on, we find some books dating from the 14th Century - a book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these are unconnected to the indian food that appears on menues today, but instead accounts of the types of food on the menues of the rich and powerful of that period. During the following few centuries, the powerful and wealthy houses strove to serve up the most exotic banquets, and because of this cooks and their recipes increased in prestige. However, it wasn`t until the nineteenth century that haute cuisine and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, trying out, and recording recipes of the day. By the advent of the 1900s, cook books are greatly in demand mostly due to higher levels of literacy, people having more free time and a general increase in wealth. |
