The History of Recipes
We can trace the history of `recipes` back into distant history, certainly as far as the ancient Egyptians, and possibly even further. Interesting though that is, sadly, these ancient recipes were just simple hieroglyphic instructions for meal preparation.
During the time of the Roman Empire a man called Apicius created a number of documents which described recipes prepared by his fellow Romans. In his scrolls, he describes how the meals were separated into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. This early Roman chef tells us how the Romans were skilled in the use of many different aromatic flavours, including a few that will be familiar to modern chefs for example bay, mint and dill. In the fifteenth century, knights returning from the crusades brought us many new foods and spices from the Middle-East, including spices such as coriander, parsley, basil and rosemary. These new foods and tastes caused an eruption in books on cooking, some of which still exist in private cookery archives. By the arrival of the 20th century, cooking publications are increasing in popularity as a result of increased literacy, increased leisure time and a general increase in wealth. |
