2 small potatoes
3 tbsp chopped celery
1 tsp minced onion
1/8 tsp celery seed
3 tbsp low-cal mayonnaise
1/4 cup egg substitute
Directions
BOIL POTATOES WITH THE SKIN ON, COOL, PEEL AND DICE. PREPARE EGG BY:
PUT EGG SUBSTITUTE IN A NO-STICK PAN AND COOK FOR ABOUT 10 MINUTES ON
LOW HEAT. REMOVE FROM HEAT AND COOL FOR 10 MINUTES. CUBE THE EGG IN
THE PAN AND REMOVE WITH A PANCAKE TURNER. LET COOL.
MIX REMAINING INGREDIENTS TOGETHER AND CHILL BEFORE SERVING. VALUES

The History of Recipes
Historians have proved the existance of recipes back into ancient history, certainly as far as pharonic Egypt, and possibly even further than that. Interesting though that is, these, old records were just very basic hieroglyphic instructions for preparing food.
During Roman times around 25BC a man called Apicius created some documents detailing recipes prepared by wealthy roman citizens. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the Romans made use of many different spices, including a few that will be familiar to modern chefs such as bay, rue and parsley. During the succeeding few hundred years, the rich families of the West competed to lay on the most extravagent banquests, and consequentially cooks and their recipe collections were much in demand. However, it was during the 19th century that haute cuisine and cookery books became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and publishing the recipes that were being prepared for the better households. Like it or not, the introduction of television brings us TV cooks and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like those on this recipe site. |
