The History of Recipes
Written cooking instructions as an idea can be found far back into ancient history, in fact as far back into recorded history as ancient Egypt, and maybe even further. However, mostly, these old cook books were just simple pictorial recipes for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to historians is a series of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. As we move into The time of the roman empire around 25BC a roman called Apicius created a collection of documents showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, Apicius describes how the roman meals were split into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius also informs us how the cooks of Roman times used a good variety of herbs and spices, including a few that will be familiar to modern chefs for example basil, rue and asafoetida. Moving our culinary historical trip onwards, there were a couple of books which appeared in the 1300s ; one book called `Forme of Cury`, and another entitled `Curye on Inglish`. Surprisingly, these two books are unconnected to the indian food that is popular today, but rather accounts of the types of meals on the menues of the rich and powerful of the period. In the 15th century, people returning from the crusades brought us a variety of foods and herbs from Arab countries, including spices such as parsley and basil. These new herbs and spices created an eruption in recipe manuscripts, many of which still exist in private libraries. The arrival of TV gave us TV chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on our web site. |
