The History of Recipes
Experts have proved the existance of recipes back into distant history, in fact as far back into recorded history as early Egypt, and possibly even further than that. In practice though, generally, these ancient recipes were just simple pictorial instructions for food preparation.
In fact, the oldest recipe found, according to academics are some clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Progressing into Roman times around 25BC a roman called Apicius wrote a number of documents detailing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals were split into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius recounts how the Roman chefs were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs for example bay, mint and asafoetida. For the centuries that followed, the powerful and rich houses competed to serve the most extravagent banquests, and as a result chefs and their recipes were at a premium. Even so, it was during the 19th century that cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes common in their social group. By the advent of the twentieth century, cook books were highly popular as a result of increased literacy, leisure time and having more disposable income. |
