The History of Recipes
Recipes as an idea can be tracked far back into antiquity, in fact as far into history as the early Egyptians, and maybe even further. Having said that, generally, these early records were just basic pictorial instructions for food preparation.
Fascinatingly, the oldest recipe discovered, according to food historians are a few tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents describing recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main meal and afters, something that is very familiar to us today. Aspicius also informs us how the cooks of Roman times were skilled in the use of a good variety of aromatic flavors, including many that are still in use today like bay, mint and asafoetida. Over the following few centuries, the powerful and wealthy competed with each other to offer the most extravagent banquests, and consequentially the best chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that cooking and recipe publications really came of age. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, trying out, and recording recipes that were common in the better off homes of the day. The arrival of TV gave us TV cookery programs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on sites such as this. |
