The History of Recipes

We can read the history of written recipes far back into the far past, at least as far into history as the ancient Egyptians, and possibly even further than that. Having said that, these, ancient cook books were just simple pictorial instructions for food preparation.

In fact, the oldest recipe in existence, according to academics is a collection of clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`.

Later on, in Roman times around 25BC a roman called Apicius created some documents detailing recipes cooked by his fellow Romans. In his publication, Apicius tells us how the roman meals were split into starters, main meal and afters, a style of dining still practiced today. Additionally, he describes how the chefs of Roman times used many different aromatic flavours, including many that are still in use today like basil, mint and asafoetida.

Later on in the 1400s, people returning from the crusades brought back many spices and herbs from Arab cooking, such as basil and rosemary. These new culinary innovations led to an eruption in manuscripts on food, many of which are now in private collections.

For the next few years, the powerful and rich competed to offer the most exotic banquets, and as a consequence, cooks and their collection of recipes were much in demand. Notwithstanding that, it was during the 19th century that formal cookery and recipe collections became really popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and recording recipes to help cooks of their time.

By the advent of the twentieth century, cookbooks are in great demand, mostly due to more people being able to read, more free time and having more disposable income.

The introduction of the TV gave us TV cookery programs and the accompanying recipe books.

Which pretty much brings us up to date and the internet revolution, allowing everybody to access thousands of recipes like those on sites such as the one you are reading now.
