The History of Recipes
Food historians have traced the existence of recipes far back into ancient history, in truth as far back into recorded history as the Egyptians, and maybe further still. In practice though, sadly, these ancient records were just basic hieroglyphic instructions for preparing meals.
Fascinatingly, the most ancient recipe in existence, according to food historians is a collection of ancient tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. As we move into The time of the roman empire 25BC a roman called Apicius created a collection of documents which described recipes prepared by his fellow Romans. He tells us how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and dessert, something that is very familiar to us today. This early Roman chef tells us how the early Romans used many herbs and spices, including a few you will know for example thyme, rue and parsley. In the fifteenth century, people returning from the crusades brought us many new foods, spices and herbs from Arab countries, including rosemary and coriander. These new culinary innovations prompted a surge in recipe publications, some of which are now in private collections. By the arrival of the 20th century, cookery books are increasing in popularity due to more people being able to read, people having more leisure time and having more money to spend. The introduction of television gave us celebrity chefs and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, permitting everybody to access thousands of recipes like the ones you can find on our web site. |
