The History of Recipes
Recipes as a concept can be found back into ancient history, in fact as far back into recorded history as early Egypt, and possibly even further. Interesting though that maybe, in the main part, these ancient cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to academics is a collection of clay tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Progressing into Roman times 25BC a man called Apicius created some scripts showing how to cook the recipes prepared by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were separated into appetizers, main meal and dessert, a style of dining still practiced today. This early Roman chef tells us how the ancient Romans used many different spices, including a few you will know such as basil, mint and asafoetida. Continuing our culinary historical journey, we have a couple of books which were published in the 1300s ; a cookery book entitled `Forme of Cury`, and another named `Curye on Inglish`. Although the titles sound familiar, these two books have no connection with the curry that is popular today, but instead descriptions of the types of food enjoyed by the upper classes. Later on, in the 15th century, knights returning from the crusades brought back many new foods and herbs from Arab cooking, such as basil and coriander. The introduction of these new herbs and spices led to an explosion in publications on food, many of which are kept safe in academic collections. The TV revolution brings us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes like those on this web site. |
