4 cup potato, grated
1 cup onion, grated
2 each egg whites
1 salt & pepper, to taste
2 tbsp vegetable oil, or baking spray
Directions
Preheat oven to 375F. Place rack in bottom third. Combine potatoes,
onion, egg whites, salt and pepper. Grease or spray baking sheet.
Drop 2 tbsp. of mixture and flatten into each circle. Place in oven
and bake for about 20 minutes per side, or until crisp on both sides.

The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions way back into the far past, in fact as far as ancient Egypt, and quite possibly further than that. In practice though, mostly, these ancient recipes were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
Interestingly, the most ancient recipe found, according to academics are a few ancient tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Closer to modern times, we have two books which date from the fourteenth century : a cookery book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these are unconnected to the curry that appears on menues today, but instead accounts of the types of food prepared by the cooks of the nobility of those days. Later on in the 1400s, knights returning from the crusades brought us many foods, spices and herbs from the East, including spices like basil and coriander. The introduction of these new culinary ideas created an increase in manuscripts on food, the majority of which are now in private libraries. For the decades that followed, the rich families of the West competed with each other to lay on the best banquets, and as a result the best chefs and their recipe collections increased in prestige. However, it was during the nineteenth century that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted much of their lives to collating, testing, and recording popular recipes of the day. By the time we get to the 20th century, cooking publications were in high demand, due to increased literacy, people having increased free time and a general increase in wealth. The arrival of television brings us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to access massive numbers of recipes like the ones you can find on this site. |
