3 eggs
1 lb 5 oz. part-skim ricotta cheese
1 cup sugar
1/4 cup cornstarch
1 tsp baking powder
1 tsp vanilla
2 tsp grated lemon peel
3/4 cup sliced strawberries
Directions
Preheat oven to 350 degrees F. Combine eggs, Ricotta, and sugar. Beat
until smooth. Stir together cornstarch and baking powder, and add to
cheese mixture along with vanilla and lemon peel. Bake 55 to 60
minutes, or until firm. Let cool, then refrigerate. Decorate with
strawberries.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into antiquity, at least as far into history as the Egypt of the Pharoahs, and possibly even further. However, in the main part, these early cookbooks were just basic pictorial instructions for food preparation.
Fascinatingly, the most ancient recipe found, according to food historians are some clay tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. As our culinary historical trip moves on a few more years we have some books which appeared in the 1300s - a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these two books have no connection with the curry that is popular today, but instead recipes for the types of meals prepared by the cooks of the rich and powerful of those days. Over the following few hundred years, the wealthy families of Europe strove to serve up the most exotic meals, and as a result cooks and their recipes were at a premium. Nevertheless, it was during the 19th century that formal cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and publishing the recipes of their peers. By the arrival of the 20th century, recipe books were greatly in demand mostly as a result of increased literacy, more free time and having more money to spend. |
