Lower-Fat Cheesecake Recipe

Ingredients

3 eggs
1 lb 5 oz. part-skim ricotta cheese
1 cup sugar
1/4 cup cornstarch
1 tsp baking powder
1 tsp vanilla
2 tsp grated lemon peel
3/4 cup sliced strawberries


Directions

Preheat oven to 350 degrees F. Combine eggs, Ricotta, and sugar. Beat
until smooth. Stir together cornstarch and baking powder, and add to
cheese mixture along with vanilla and lemon peel. Bake 55 to 60
minutes, or until firm. Let cool, then refrigerate. Decorate with
strawberries.

The History of Recipes

Over the following few hundred years, the wealthy families of Europe strove to serve up the most exotic meals, and as a result cooks and their recipes were at a premium. Nevertheless, it was during the 19th century that formal cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and publishing the recipes of their peers.

By the arrival of the 20th century, recipe books were greatly in demand mostly as a result of increased literacy, more free time and having more money to spend.
