The History of Recipes
Food historians have traced the existance of recipes far back into ancient history, at least as far into history as ancient Egypt, and possibly even further. Interesting though that is, mostly, these old cookbooks were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, are some ancient tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. During Roman times around 25BC a roman called Apicius created a collection of documents detailing recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into starters, main course and dessert, something we still use today. This early Roman chef tells us how the ancient Romans were skilled in the use of many different aromatic flavors, including a few that are still present in modern kitchens like thyme, mint and parsley. During the succeeding few hundred years, the rich and powerful families of the West competed to offer the most exotic meals, and consequentially chefs and their recipe collections were highly sought after. However, it was during the nineteenth century that haute cuisine and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, trying out, and recording recipes to help cooks of their time. By the arrival of the 1900s, cookery books are in great demand, mostly as a result of better eduction, more spare time and being a little richer. |
