The History of Recipes
We can read the history of meal recipes far back into history, in fact as far into history as the Egyptians, and maybe further still. In practice though, mostly, these ancient recipes were just basic hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, is a collection of stone tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a number of documents detailing recipes prepared by wealthy Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the early Romans used many herbs, including some that we all recognise such as bay, rue and parsley. Over the following few centuries, the powerful and rich houses competed to lay on the most extravagent banquests, and as a result chefs and their collection of recipes were greatly in demand. Even so, it wasn`t until the 1800s that cooking and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and writing down popular recipes of the day. When we get to the 1900s, cook books were highly popular as a result of increased literacy, more spare time and being a little richer. |
