The History of Recipes

Recipes as a concept can be observed back into ancient history, in fact as far back into history as the early Egyptians, and possibly even further than that. In practice though, these, ancient recipes were just primitive hieroglyphic instructions for preparing meals.

Fascinatingly, the most ancient recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`.

Progressing into The time of the roman empire around 25BC a man called Apicius created some scripts showing how to cook the recipes enjoyed by the Romans. In his works, he tells us how the roman meals were split into appetizers, entrees and dessert, something that is very familiar to us today. He also tells us how the Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs like basil, fennel and asafoetida.

As our culinary historical trip moves to more modern times we have some books dating from the 14th Century ; a recipe book entitled `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these two books have no connection with the indian food that appears on menues today, but instead accounts of the types of meals prepared by the cooks of the nobility of that period.

In the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from middle-east cuisine, such as parsley and basil. The introduction of these new tastes led to an outbreak in recipe manuscripts, some of which are kept safe in private cookery archives.

The arrival of TV brings us TV chefs and the accompanying recipe books.

And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes just like those on this site.
