The History of Recipes
Transcribed cooking instructions as an idea can be found way back into the far past, in truth as far back as the Egypt of the Pharoahs, and maybe even further. In practice though, sadly, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the oldest recipe found, according to food historians are some stone tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. As our culinary historical trip moves to more modern times we have two interesting books from the 14th Century - a book titled `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, they are nothing to do with the curry that is popular today, but rather accounts of the types of meals on the menues of the wealthy. Over the following few centuries, the upper-class families of Europe competed with each other to serve up the best banquets, and as a result the best cooks and their recipes could command a high salary. Even so, it was during the 1800s that formal cookery and recipe collections became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and publishing the recipes of their peers. By the arrival of the twentieth century, cooking books are in high demand, due to increased literacy, more leisure time and having more money to spend. |
