The History of Recipes
It is actually possible to track the history of recipes way back into the far past, at least as far back into recorded history as the Egyptians, and maybe further still. However, mostly, these ancient recipes were just basic pictorial recipes for food preparation.
The truth of the matter is, the oldest recipe in existence, according to academics is a collection of clay tablets in ancient Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. As we move into Roman times 25BC a man called Apicius created some scripts describing recipes prepared by the Romans. In his scrolls, Apicius describes how the roman meals were split into appetizers, main meal and dessert, a style of dining still practiced today. Aspicius tells us how the chefs of Roman times made use of many different aromatic flavours, including a few that will be familiar to modern chefs like basil, fennel and dill. Moving on, we have a couple of interesting books from the 14th Century ; a cookery book entitled `Forme of Cury`, and another entitled `Curye on Inglish`. Amusingly, these two books have no connection with the indian food that is popular today, but rather recipes for the types of meals prepared for the upper classes of the period. In the fifteenth century, people returning from the crusades brought us a variety of foods and herbs from the East, including spices like basil and coriander. These new foods and tastes caused an eruption in recipe manuscripts, most of which still exist in private collections. Over the following few hundred years, the rich and powerful families of the West strove to serve up the most extravagent meals, and as a result the best chefs and their recipe collections were at a premium. However, it wasn`t until the 19th century that haute cuisine and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. By the arrival of the 20th century, cookery books were greatly in demand mostly as a result of increased literacy, people having increased free time and having more disposable income. The introduction of television gave us TV chefs and the demand for the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes such as those found on our web site. |
