YOGURT SAUCE
1/2 cup low-fat plain yogurt
1/4 cup chopped cucumber
1 tbsp chopped onion
1/2 tsp chopped fresh mint
1/4 tsp salt
GYROS
1 clove garlic, finely chopped
3/4 tsp leaf oregano, crumbled
1/2 tsp ground coriander
1/2 tsp salt
1/4 tsp ground allspice
2 minute steaks (10 ounces), cut cros, swise into 2 x 1/
1 inch strips
2 tsp oil
2 large pita breads, cut in half
1 sliced cucumber
Directions
1. Prepare yogurt sauce: Combine yogurt, cucumber, onion, mint and
salt.
2. Prepare Gyros: Combine garlic, oregano, coriander, salt and
allspice in small bowl. Pat minute steak dry on paper toweling. Add
to spice mixture.
3. Cook steak in oil in skillet over medium heat until medium-rare, 2
to 3 minutes. Spoon into pita. Garnish with cucumber. Serve with
sauce.
Nutrient Value Per Serving: 462 calories, 40 g protein, 14 g fat, 42 g
carbohydrate, 1,304 mg sodium,
87 mg cholesterol.

The History of Recipes
Experts have proved the existence of recipes far back into antiquity, at least as far into history as the ancient Egyptians, and maybe even further. However, sadly, these ancient recipes were just simple hieroglyphic instructions for meal preparation.
Fascinatingly, the oldest recipe found, according to Professor Solomon Katz, are a few stone tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. As our culinary historical trip moves on a few more years we find some recipe books which date from the 1300s : one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, these books are nothing to do with the indian curry that is familiar to us all today, but instead recipes for the types of meals on the menus of the wealthy. In the fifteenth century, people returning from the crusades brought back many spices and herbs from the Middle-East, including spices such as basil and rosemary. These new foods and spices created an outbreak in books on cooking, most of which are kept safe in private libraries. Over the following few hundred years, the powerful and rich houses competed to offer the most exotic banquets, and as a result chefs and their collection of recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to assembling, testing, and publishing the recipes of their peers. By the arrival of the 20th century, cook books are in great demand, mostly due to increased literacy, leisure time and being a little richer. The introduction of television gave us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes just like those on this web site. |
