The History of Recipes
Food historians have traced the existance of recipes back into the distant past, in truth as far as ancient Egypt, and maybe further still. However, in the main part, these early cookbooks were just very basic hieroglyphic or cunieform instructions for food preparation.
During Roman times around 25BC a man called Apicius assembled some documents which described recipes prepared by wealthy Romans. He describes how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. He also recounts how the Roman chefs were skilled in the use of a good variety of herbs and spices, including some familiar names such as bay, fennel and dill. During the succeeding few hundred years, the powerful families of Europe tried to lay on the most exotic meals, and because of this the best cooks and their collection of recipes increased in prestige. Nevertheless, it wasn`t until the nineteenth century that fine cookery and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, verifying, and writing down popular recipes of the day. Like it or not, the introduction of television brought us celebrity chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on our site. |
