14 1/2 fl low-sodium chicken broth
1 cup am white indian basmati rice
1 bay leaf
1 cup sliced mushrooms
1 sea salt to taste (optional)
Directions
Bring broth to a boil. Add other ingredients. Reduce heat and cover.
Simmer for 20-25 minutes. Remove bay leaf and serve.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions far back into the distant past, at least as far back into recorded history as pharonic Egypt, and possibly even further than that. Interesting though that maybe, these, early cookbooks were just very basic pictorial recipes for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics are a few ancient tablets in the Sumerian language describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Continuing our culinary historical journey, we have a couple of cookery books published in the 1300s - a cookery book published under the title `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the curry that we all know today, but rather recipes for the types of food eaten by the rich and wealthy people of that time. Over the succeeding few hundred years, the upper-class families of Europe competed to lay on the most extravagent banquests, and because of this chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, testing, and recording recipes common in their social group. When we get to the twentieth century, cooking books are highly popular as a result of higher levels of literacy, increased leisure time and having more disposable income. |
