The History of Recipes
Written recipes as a concept can be tracked far back into the distant past, in fact as far back as early Egypt, and possibly even further than that. Interesting though that is, these, old cook books were just very simple hieroglyphic or cunieform instructions for meal preparation.
Progressing into The time of the roman empire around 25BC a roman called Apicius created a few scripts showing how to cook the recipes cooked by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and desserts, something that is very familiar to us today. This early Roman chef tells us how the Romans made use of many different herbs, including a few you will know like bay, mint and dill. Over the following few centuries, the families of Europe strove to offer the most extravagent meals, and as a result cooks and their recipe collections could command a high salary. However, it was during the nineteenth century that cookery and recipe publications became popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and writing down recipes to help cooks of their time. By the arrival of the twentieth century, cookbooks were greatly in demand mostly as a result of increased literacy, people having more free time and having more money to spend. |
