4 leeks, cut into 1/2 slices
1 medium diced onion
4 med. potatoes peeled & diced
4 cup chicken broth
1 cup sour cream
1 1/2 tbsp butter or margarine
1 pepper to taste
Directions
In a large saucepan melt butter and add leeks and onions. Cook,
covered, until vegetables are tender, stirring occasionally. Add
potatoes and broth and simmer covered for 40 minutes. Add sour cream
and heat to serving temperature but do not boil. Season with pepper
and serve at once.

The History of Recipes
It is possible to read the history of written recipes far back into antiquity, certainly as far into history as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, generally, these early cook books were just simple hieroglyphic or cunieform instructions for meal preparation.
Later on, in The time of the roman empire 25BC a roman called Apicius wrote some documents describing recipes cooked by wealthy roman citizens. In his works, he recounts how the roman meals were split into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. Additionally, he describes how the Roman cooks made use of many spices and herbs, including a few that will be familiar to modern cooks like basil, rue and dill. During the following few hundred years, the powerful and wealthy houses competed with each other to lay on the most extravagent banquests, and as a consequence, cooks and their collection of recipes could command a high salary. However, it wasn`t until the 19th century that haute cuisine and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, testing, and publishing recipes to help cooks of their time. By the time we get to the 1900s, cook books are in high demand, as a result of more people being able to read, more spare time and having more money to spend. |
