4 lb beef short ribs, trimmed
1 of excess fat and cut
1 crosswise no more than 3/8
1 to 1/2 thick
2/3 cup thinly sliced green onions
1/2 cup soy sauce
1/2 cup water
1/4 cup oriental dark roasted
1 sesame oil
2 1/2 tbsp packed brown sugar
1 1/2 tbsp toasted sesame seeds,
1 crushed
1 tbsp minced garlic
1 tbsp grated fresh ginger root
1/2 tsp ground red pepper
1/8 tsp freshly ground szechuan
1 peppercorns
1 fresh red chili peppers
1 green onions
1 radish roses
Directions
Combine sliced green onions,soy sauce,water,sesame oil,brown
sugar,sesame seeds,garlic,ginger,red pepper and Szechuan
peppercorns.Place ribs and marinade in plastic bag or utility dish,
turning to coat.Close bag securely or cover dish;marinate in
refrigerator 4 to 6 hours,turning occasionally.Remove ribs from
marinade;reserve marinade.Place ribs on grid over medium coals. Broil
5 to 6 minutes.Turn ribs over;brush or spoon on marinade 1
time.Cover;continue cooking 5 to 6 minutes or until desired degree of
doneness.Place ribs on platter;garnish with chili peppers,green
onions and radish roses.Makes 6 servings.

The History of Recipes
Written cooking instructions as an idea can be tracked far back into the distant past, certainly as far as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, these, ancient cookbooks were just very simple hieroglyphic instructions for preparing food.
In fact, the most ancient recipe found, according to experts in ancient history are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Later on, there are some books dating from the 14th Century - a book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. The titles are somewhat misleading tho`, these have no connection with the indian curry that is familiar to us all today, but rather descriptions of the types of meals on the tables of the nobility of those days. For the next few years, the powerful families of the West strove to serve the most exotic banquets, and as a result cooks and their recipes increased in prestige. However, it wasn`t until the 19th century that fine cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and writing down the recipes that were being prepared for the better households. By the advent of the twentieth century, recipe books are greatly in demand mostly due to increased literacy, people having more free time and a general increase in wealth. The introduction of the TV brought us TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to access thousands of recipes such as those found on our site. |
