The History of Recipes
Transcribed cooking instructions as an idea can be traced back into the distant past, in fact as far into history as early Egypt, and possibly even further. Interesting though that maybe, generally, these ancient cook books were just simple hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to food historians is a collection of tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated. Much later, in Roman times a man called Apicius compiled a few documents describing recipes prepared by wealthy Romans. In his works, he describes how the roman meals were separated into appetizers, main course and dessert, a very modern way of dining. He also recounts how the chefs of Roman times made use of a good variety of herbs and spices, including a few that will be familiar to modern chefs for example basil, fennel and dill. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from middle-east cuisine, including basil and coriander. The introduction of these new culinary ideas created a torrent in recipe publications, most of which are kept safe in private collections. Over the succeeding few hundred years, the wealthy families of the West competed with each other to offer the most exotic banquets, and because of this the best cooks and their recipe collections were at a premium. However, it was during the nineteenth century that haute cuisine and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing the recipes of their peers. When we get to the twentieth century, cooking books were in great demand, due to higher levels of literacy, people having increased free time and having more money to spend. The TV revolution brought us TV cookery programs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes such as those found on our web site. |
