The History of Recipes
It is quite possible to trace the history of written cooking instructions back into history, in truth as far back as the early Egyptians, and possibly even further. Having said that, generally, these old records were just very basic hieroglyphic instructions for preparing meals.
The truth of the matter is, the most ancient recipe in existence, according to experts is a series of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. As we move into Roman times around 25BC a man called Apicius compiled a few documents which described recipes cooked by his fellow Romans. In his works, he tells us how the roman meals were separated into starters, entrees and dessert, a very modern way of dining. Aspicius also informs us how the Roman cooks were skilled in the use of a wide range of aromatic flavours, including a few that will be familiar to modern chefs like thyme, rue and asafoetida. Moving on, there are two books dating from the 1300s : a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, they are nothing to do with the curry that we all know today, but rather accounts of the types of food enjoyed by the upper classes. Later, in the 15th century, the Crusaders brought back many new spices and herbs from Arab cooking, such as parsley, basil and rosemary. These new foods and spices was responsible for a surge in manuscripts on food, most of which still exist in private cookery archives. By the advent of the 1900s, cooking books were starting to become popular mostly due to more people being able to read, more free time and disposable income. Like it or not, the introduction of TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on our site. |
