The History of Recipes
Transcribed cooking instructions as an idea can be found far back into history, in fact as far into history as pharonic Egypt, and maybe further still. Interesting though that maybe, in the main part, these old cookbooks were just primitive hieroglyphic recipes for meal preparation.
Progressing into The time of the romans 25BC a roman called Apicius compiled a number of documents detailing recipes enjoyed by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. He also tells us how the cooks of Roman times were skilled in the use of many spices and herbs, including a few that are still present in modern kitchens like thyme, fennel and parsley. Over the next few centuries, the rich and powerful families of Wesstern Europe competed to serve up the most extravagent meals, and as a consequence, chefs and their collection of recipes could command a high salary. Even so, it wasn`t until the nineteenth century that formal cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, testing, and recording recipes that were common in the better off homes of the day. By the arrival of the twentieth century, cookery books were highly popular mostly as a result of more people being able to read, increased leisure time and having more money to spend. |
