The History of Recipes
We are able to trace the history of meal recipes way back into the far past, at least as far back as early Egypt, and possibly even further. Having said that, generally, these ancient cook books were just very basic hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to experts are a few tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. As we move into Roman times 25BC a roman called Apicius assembled a collection of scripts detailing recipes cooked by wealthy Romans. In his works, Apicius recounts how the roman meals were divided into hors d`oeuvre, main meal and dessert, something we still use today. Aspicius also tells us how the early Romans used many different aromatic flavours, including a few you will know like basil, rue and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back many foods and herbs from middle-east cuisine, including spices such as basil and rosemary. The introduction of these new foods and spices caused an eruption in recipe publications, many of which are now in academic collections. During the next few centuries, the upper-class families of Wesstern Europe competed to serve up the most extravagent meals, and because of this chefs and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 19th century that haute cuisine and recipe collections became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collating, trying out, and publishing recipes to help cooks of their time. The revolution that is television brings us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to access thousands of recipes like those on our site. |
