The History of Recipes
Recipes as a concept can be traced back into ancient history, certainly as far back as pharonic Egypt, and quite possibly further than that. However, mostly, these early cookbooks were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Later on, in The time of the romans 25BC a roman called Apicius created a collection of scripts detailing recipes prepared by the Romans. In his scrolls, he recounts how the meals were divided into starters, main course and afters, a very modern way of dining. Aspicius describes how the early Romans made use of many different herbs, including some familiar names such as thyme, rue and parsley. Later on, in the 15th century, people returning from the crusades brought us a variety of spices and herbs from the East, such as parsley and basil. These new foods and tastes was responsible for an increase in manuscripts on cookery, the majority of which still exist in private libraries. Over the succeeding few centuries, the upper classes competed to lay on the most exotic banquets, and as a result cooks and their recipe collections could command a high salary. However, it was during the nineteenth century that cooking and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, trying out, and publishing recipes to help cooks of their time. When we get to the twentieth century, cookery publications are increasing in popularity due to increased literacy, people having increased spare time and having more money. |
