The History of Recipes
Recipes as a concept can be found way back into distant history, in truth as far back into recorded history as ancient Egypt, and quite possibly further than that. However, sadly, these old recipes were just basic hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to Professor Solomon Katz, is a collection of clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Progressing into Roman times 25BC a roman called Apicius assembled a number of documents which described recipes enjoyed by wealthy Romans. In his works, Apicius describes how the meals were divided into hors d`oeuvres, main meal and afters, something we still use today. Additionally, he describes how the cooks of his times were skilled in the use of a wide range of spices, including some familiar names like thyme, mint and asafoetida. Continuing our culinary historical journey, there were a couple of interesting cookery books which appeared in the fourteenth century ; a recipe book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Surprisingly, these books are unconnected to the curry that is familiar to us all today, but rather accounts of the types of meals eaten by the rich people of that time. Later, in the fifteenth century, people returning from the crusades brought us many foods, spices and herbs from the holy lands, including spices such as rosemary and coriander. The introduction of these new culinary ideas led to a torrent in manuscripts on cookery, some of which are now in private cookery archives. By the time we get to the 1900s, cookbooks were in high demand, due to better eduction, more spare time and having more money. |
