The History of Recipes
Transcribed cooking instructions as an idea can be found way back into distant history, certainly as far into history as pharonic Egypt, and potentially, even further back. Having said that, generally, these ancient cookbooks were just basic hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history are a few stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a roman called Apicius assembled a few documents describing recipes cooked by wealthy roman citizens. In his scrolls, he recounts how the meals were split into hors d`oeuvres, main meal and desserts, a very modern way of dining. Aspicius also recounts how the Roman chefs were skilled in the use of a wide range of herbs and spices, including some that we all recognise for example thyme, fennel and parsley. Later on, in the 15th century, knights returning from the crusades brought back many foods and spices from Arab countries, including spices like coriander, parsley, basil and rosemary. These new foods and spices created an explosion in recipe books, most of which are now in private collections. When we get to the twentieth century, cookery publications were in high demand, as a result of more people being able to read, people having increased leisure time and a general increase in wealth. The TV revolution brings us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access massive numbers of recipes just like those on our web site. |
