The History of Recipes
Academics have tracked the existance of recipes far back into the far past, certainly as far into history as the Egyptians, and possibly even further. Having said that, in the main part, these old cook books were just basic hieroglyphic or cunieform recipes for food preparation.
During Roman times around 25BC a roman called Apicius created a number of documents describing recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were split into hors d`oeuvre, main course and dessert, something we still use today. Aspicius tells us how the ancient Romans made use of a good variety of spices and herbs, including a few you will know such as basil, mint and asafoetida. During the succeeding few hundred years, the families of Europe competed with each other to lay on the best banquets, and because of this chefs and their recipes were greatly in demand. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down the recipes that were being prepared for the better households. By the arrival of the 1900s, cookbooks were in high demand, due to higher levels of literacy, more spare time and being a little richer. |
