The History of Recipes
It is quite possible to track the history of transcribed cooking instructions way back into antiquity, certainly as far back into history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, sadly, these ancient cook books were just simple pictorial recipes for food preparation.
Progressing into The time of the romans around 25BC a roman called Apicius compiled a few scripts detailing recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals were separated into starters, main meal and dessert, something we still use today. This early Roman chef describes how the Roman chefs were skilled in the use of a good variety of herbs and spices, including some that we all recognise like bay, mint and parsley. In the fifteenth century, people returning from the crusades brought back many foods and spices from the holy land, such as parsley, basil and rosemary. These new foods and spices was responsible for an explosion in recipe publications, many of which are now in private cookery archives. By the arrival of the 1900s, cook books were in high demand, as a result of better eduction, more free time and having more disposable income. |
