The History of Recipes
Recipes as an idea can be observed far back into antiquity, certainly as far as early Egypt, and potentially, even further back. In practice though, generally, these old cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe in existence, according to food historians is a collection of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Moving our culinary historical trip onwards, we find a couple of cookery books which appeared in the fourteenth century : a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, they are not about the indian curry that is served today, but instead recipes for the types of meals prepared by the cooks of the rich and wealthy people of that time. Over the next few hundred years, the powerful and wealthy houses competed to lay on the most extravagent meals, and as a consequence, the best chefs and their collection of recipes were at a premium. Notwithstanding that, it was during the nineteenth century that fine cooking and cookery books reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, trying out, and recording recipes of the day. The arrival of TV gave us TV cooks and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on sites such as the one you are reading now. |
