The History of Recipes
Experts have traced the existance of recipes far back into history, certainly as far into history as early Egypt, and maybe further still. Having said that, generally, these ancient recipes were just very basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
Interestingly, the oldest recipe discovered, according to food historians are some tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `wonderful`. During Roman times 25BC a roman called Apicius wrote a number of documents describing recipes cooked by the Romans. In his scrolls, he recounts how the meals were split into appetizers, main course and dessert, something that is very familiar to us today. Aspicius also recounts how the early Romans made use of many spices, including a few you will know like basil, rue and dill. During the succeeding few centuries, the powerful and rich houses competed with each other to lay on the most extravagent meals, and consequentially the best cooks and their collection of recipes could command a high salary. Nevertheless, it was during the nineteenth century that fine cookery and recipe publications reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collecting, testing, and writing down recipes to allow everyone to enjoy them. By the arrival of the 1900s, cook books were in high demand, mostly as a result of better eduction, people having more leisure time and having more money to spend. Like it or not, the introduction of television gave us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on this web site. |
