The History of Recipes
It is actually possible to track the history of recipes back into the distant past, certainly as far back into history as ancient Egypt, and potentially, even further back. In practice though, in the main part, these ancient records were just basic hieroglyphic or cunieform recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered so far, according to food historians is a series of clay tablets in Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Moving on, there are a couple of recipe books which date from the fourteenth century - a book called `Forme of Cury`, and another, similary titled `Curye on Inglish`. The titles are a little misleading though, these two books are nothing to do with the indian curry that we all know today, but rather descriptions of the types of meals on the menues of the nobility of that period. Later, in the 15th century, the Crusaders brought back a variety of spices and herbs from Arab cuisine, including spices like coriander, parsley, and rosemary. The introduction of these new tastes created a surge in books on cookery, the majority of which still exist in private collections. During the following few centuries, the powerful families of Wesstern Europe competed to serve up the most exotic meals, and because of this the best chefs and their recipes could command a high salary. Notwithstanding that, it was during the 1800s that fine cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, trying out, and writing down recipes common in their social group. By the advent of the 1900s, recipe publications were highly popular mostly due to higher levels of literacy, people having increased leisure time and having more money to spend. The revolution that is television brought us TV cooks and the recipe books that accompanied them. Which brings us neatly up to date and the invention of computers and the internet, permitting everyone to search through thousands of recipes like those on sites such as the one you are reading now. |
