The History of Recipes
It is quite possible to track the history of written cooking instructions way back into distant history, in fact as far back into recorded history as the early Egyptians, and possibly even further than that. In practice though, mostly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a few documents showing how to cook the recipes enjoyed by wealthy Romans. He describes how the meals were divided into appetizers, entrees and afters, something we still use today. Aspicius informs us how the chefs of Roman times made use of a good variety of herbs, including some familiar names such as bay, fennel and dill. During the next few hundred years, the upper-class families of Wesstern Europe strove to serve the most exotic banquets, and consequentially cooks and their recipe collections were greatly in demand. Notwithstanding that, it was during the 1800s that formal cookery and recipe books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and writing down recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cookery publications were greatly in demand due to better eduction, people having more free time and being a little richer. |
