The History of Recipes
Experts have tracked the existence of recipes way back into antiquity, at least as far back as the early Egyptians, and possibly even further. Interesting though that maybe, generally, these early recipes were just primitive hieroglyphic instructions for preparing meals.
Fascinatingly, the oldest recipe discovered so far, according to historians is a collection of clay tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel blissful. As we move into The time of the roman empire 25BC a roman called Apicius compiled a number of documents detailing recipes enjoyed by his fellow Romans. In his publication, he recounts how the roman meals were divided into appetizers, main course and dessert, a style of dining still practiced today. He also recounts how the Romans made use of a wide range of aromatic flavours, including a few you will know such as bay, rue and asafoetida. As our culinary historical trip moves to more modern times there were two recipe books dating from the 1300s ; one book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, these two books are not about the indian food that is popular today, but instead descriptions of the types of food on the menus of the upper classes of the time. In the 15th century, people returning from the crusades brought us a variety of foods, spices and herbs from middle-east cuisine, including spices such as rosemary and coriander. These new spices and herbs created an increase in publications on food, many of which are kept safe in academic collections. Over the next few centuries, the rich and powerful families of Wesstern Europe competed to serve up the best banquets, and because of this chefs and their recipe collections were much in demand. Even so, it was during the nineteenth century that fine cookery and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, trying out, and writing down recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, cookery books were highly popular due to higher levels of literacy, increased leisure time and having more money. The introduction of television brings us TV cooks and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes just like those on our site. |
