The History of Recipes
Written cooking instructions as an idea can be tracked way back into history, in truth as far back into recorded history as ancient Egypt, and potentially, even further back. Having said that, sadly, these old cook books were just primitive hieroglyphic recipes for food preparation.
In an interesting twist, the most ancient recipe discovered, according to food historians are a few tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Later on, in The time of the romans 25BC a roman called Apicius compiled a few documents which described recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the meals were divided into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the early Romans made use of many spices, including a few that are still present in modern kitchens such as thyme, rue and parsley. Moving our culinary historical trip onwards, there were a couple of interesting cookery books which date from the fourteenth century ; a cookery book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these books are not about the indian food that is served today, but instead recipes for the types of meals served to the upper classes of that time. Later on, in the 15th century, people returning from the crusades brought us many new spices and herbs from the holy lands, including spices like parsley and basil. These new spices and herbs caused a torrent in recipe manuscripts, the majority of which are kept safe in private libraries. Over the succeeding few centuries, the rich and powerful families of Europe tried to serve the most exotic meals, and consequentially the best chefs and their recipe collections were at a premium. Even so, it wasn`t until the nineteenth century that fine cookery and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, testing, and recording the recipes that were being prepared for the better households. When we get to the 20th century, cookery publications are increasing in popularity mostly due to better eduction, people having increased leisure time and having more money to spend. The TV revolution brings us celebrity chefs and the recipe books that accompanied them. Which brings us neatly up to date and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on this recipe site. |
