The History of Recipes
It is quite feasible to track the history of transcribed cooking instructions back into antiquity, at least as far back into history as the early Egyptians, and potentially, even further back. Interesting though that is, in the main part, these old cookbooks were just basic pictorial recipes for preparing food.
Interestingly, the oldest recipe in existence, according to food historians are some tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Progressing into The time of the romans around 25BC a man called Apicius compiled a collection of documents describing recipes prepared by wealthy Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main course and desserts, something that is very familiar to us today. This early Roman chef describes how the cooks of Roman times were skilled in the use of many different herbs and spices, including a few that will be familiar to modern chefs like bay, rue and dill. Moving on, there are some recipe books dating from the fourteenth century ; a book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these are unconnected to the indian curry that appears on menues today, but instead accounts of the types of meals prepared for the rich. Later, in the 15th century, the Crusaders brought back many foods, spices and herbs from Arab cooking, including spices like basil and coriander. These new foods and tastes prompted a torrent in recipe books, some of which are now in private cookery archives. During the next few hundred years, the powerful families of Europe competed with each other to offer the most exotic banquets, and as a consequence, the best chefs and their recipe collections could command a high salary. However, it wasn`t until the nineteenth century that cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to collating, verifying, and publishing recipes to allow everyone to enjoy them. By the advent of the 1900s, cooking books were in great demand, due to more people being able to read, people having increased spare time and having more money to spend. Like it or not, the introduction of TV brought us TV cookery programs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to access massive numbers of recipes like those on our web site. |
