The History of Recipes
Written recipes as an idea can be traced back into the distant past, certainly as far back into recorded history as the early Egyptians, and possibly even further. Interesting though that maybe, these, old cook books were just primitive pictorial recipes for preparing meals.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful. Later on, in The time of the romans 25BC a man called Apicius assembled a number of scripts detailing recipes enjoyed by wealthy Romans. In his works, Apicius tells us how the roman meals were separated into appetizers, entrees and desserts, something we still use today. Aspicius describes how the Roman cooks used a wide range of spices, including a few that are still present in modern kitchens for example thyme, rue and asafoetida. Later on, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab cooking, including spices such as rosemary and coriander. The introduction of these new herbs and spices led to a surge in cookery books, many of which are now in private cookery archives. Over the succeeding few centuries, the powerful families of Wesstern Europe competed to serve the most exotic banquets, and as a consequence, chefs and their recipe collections increased in prestige. Even so, it was during the 1800s the formal cooking and recipe collections became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted their lives to assembling, testing, and recording recipes of the day. When we get to the 20th century, recipe publications were highly popular due to more people being able to read, more spare time and a general increase in wealth. The TV revolution brought us TV cooks and the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes just like those on this recipe site. |
