The History of Recipes
It is possible to track the history of written recipes back into distant history, at least as far back as the Egyptians, and quite possibly further than that. Having said that, in the main part, these old records were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered, according to food historians are some ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Later on, in The time of the romans around 25BC a man called Apicius compiled a number of scripts detailing recipes cooked by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and afters, a very modern way of dining. He also describes how the chefs of Roman times made use of a good variety of herbs, including a few that will be familiar to modern cooks such as bay, mint and dill. Later, there are two recipe books from the fourteenth century ; a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Don`t be fooled by the titles though, these books are nothing to do with the spicy food that we all know today, but rather recipes for the types of meals on the menus of the upper classes. Later on in the 1400s, knights returning from the crusades brought us many foods, spices and herbs from the holy lands, including basil and coriander. The introduction of these new foods and spices created an outbreak in cookery books, most of which are now in private collections. The arrival of television brought us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to search through massive numbers of recipes such as those found on the site you are now reading. |
