The History of Recipes
It is possible to follow the history of written recipes back into the distant past, in truth as far as the early Egyptians, and potentially, even further back. Having said that, mostly, these old cook books were just basic hieroglyphic instructions for food preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, are some ancient tablets in ancient Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire 25BC a man called Apicius assembled a number of scripts which described recipes prepared by wealthy Romans. He tells us how the roman meals were divided into hors d`oeuvre, entrees and afters, a very modern way of dining. Additionally, he describes how the ancient Romans used many different spices, including some familiar names for example thyme, rue and asafoetida. Later on, there are two interesting cookery books from the fourteenth century ; a recipe book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these are nothing to do with the curry that we all know today, but instead descriptions of the types of food prepared for the rich and powerful of that period. Later on in the 1400s, the Crusaders brought back many new foods, spices and herbs from the Middle-East, including spices like parsley and basil. The introduction of these new foods and spices prompted an outbreak in manuscripts on cooking, the majority of which are kept safe in academic collections. By the time we get to the 20th century, recipe publications were increasing in popularity due to increased literacy, people having increased spare time and being a little richer. The introduction of the TV brought us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everyone to access thousands of recipes like those on this recipe site. |
