The History of Recipes
Transcribed cooking instructions as a concept can be found far back into distant history, at least as far as pharonic Egypt, and quite possibly further than that. However, in the main part, these old recipes were just basic pictorial, hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to academics is a collection of ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. Progressing into The time of the roman empire around 25BC a roman called Apicius wrote a collection of documents describing recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were split into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. He also informs us how the ancient Romans used many different aromatic flavours, including many that are still in use today like bay, fennel and asafoetida. In the 15th century, people returning from the crusades brought back many foods and spices from Arab cooking, including spices like coriander, parsley, and rosemary. These new herbs and spices caused an eruption in books on cooking, some of which are now in academic collections. Over the following few centuries, the powerful and wealthy competed with each other to serve up the most extravagent banquests, and as a consequence, the best chefs and their recipes were at a premium. Nevertheless, it wasn`t until the 19th century that fine cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to collating, trying out, and recording recipes that were common in the better off homes of the day. By the arrival of the twentieth century, cookbooks are in high demand, as a result of more people being able to read, people having increased free time and having more disposable income. |
