The History of Recipes
Recipes as an idea can be tracked way back into the distant past, in fact as far as pharonic Egypt, and potentially, even further back. However, sadly, these ancient records were just primitive hieroglyphic recipes for preparing meals.
In an interesting twist, the most ancient recipe in existence, according to historians are a few ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a man called Apicius assembled a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his publication, Apicius tells us how the meals were divided into appetizers, entrees and afters, something we still use today. Aspicius tells us how the chefs of Roman times made use of many spices and herbs, including a few that will be familiar to modern cooks for example thyme, mint and dill. Later on, in the 15th century, the Crusaders brought back many new foods and spices from Arab countries, including spices like coriander, parsley, basil and rosemary. These new foods and spices created an outbreak in manuscripts on cooking, many of which are now in private libraries. Over the succeeding few centuries, the powerful families of the West strove to lay on the most extravagent banquests, and as a consequence, the best chefs and their collection of recipes were greatly in demand. Nevertheless, it was during the 1800s that cooking and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, testing, and publishing recipes of the day. When we get to the 20th century, recipe books are starting to become popular as a result of more people being able to read, people having increased leisure time and having more money. |
