The History of Recipes
We are able to follow the history of written recipes back into the distant past, at least as far as ancient Egypt, and maybe further still. In practice though, generally, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
The truth of the matter is, the oldest recipe discovered, according to academics are some clay tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `exhilarated, wonderful and blissful`. Later on, in The time of the roman empire around 25BC a man called Apicius assembled a number of documents describing recipes enjoyed by the Romans. He recounts how the roman meals were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Aspicius describes how the cooks of his times used a good variety of aromatic flavors, including a few you will know for example basil, mint and asafoetida. During the following few hundred years, the powerful families of Wesstern Europe competed with each other to serve the most exotic meals, and consequentially the best cooks and their collection of recipes were at a premium. Notwithstanding that, it wasn`t until the nineteenth century that fine cookery and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, trying out, and writing down recipes of the day. The arrival of television brought us cooking programs and the recipe books that accompanied them. And that brings us to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on sites such as the one you are reading now. |
