The History of Recipes
We can follow the history of written recipes far back into the far past, certainly as far into history as early Egypt, and possibly even further than that. However, sadly, these early cookbooks were just simple pictorial, hieroglyphic or cunieform recipes for food preparation.
In fact, the oldest recipe discovered so far, according to experts in ancient history is a collection of clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. Later on, in The time of the romans around 25BC a roman called Apicius created some documents describing recipes cooked by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, main meal and dessert, something we still use today. This early Roman chef informs us how the cooks of his times made use of many herbs, including a few you will know such as basil, fennel and parsley. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and herbs from Arab cooking, including coriander, basil and rosemary. The introduction of these new tastes led to an outbreak in books on cooking, the majority of which are kept safe in private collections. During the next few hundred years, the rich families of Europe competed to serve up the most exotic meals, and as a consequence, the best cooks and their recipes were at a premium. Notwithstanding that, it was during the 1800s that fine cooking and cookery books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collating, testing, and writing down recipes of the day. By the time we get to the twentieth century, recipe books were highly popular mostly as a result of more people being able to read, people having more leisure time and having more money to spend. |
