1/3 cup milk
1/2 cup shredded cheddar cheese
1 tbsp melted butter
2 tbsp dry bread crumbs

IN A 9" PIE PLATE OR SHALLOW CASSEROLE DISH, ARRANGE BROCCOLI; TOP
WITH CHICKEN. COMBINE SOUP AND MILK; POUR OVER CHICKEN. SPRINKLE WITH
CHEESE. COMBINE BUTTER AND BREAD CRUMBS. SPRINKLE OVER CHEESE. BAKE

The History of Recipes
We can track the history of `recipes` way back into the distant past, certainly as far back into history as ancient Egypt, and possibly even further than that. Interesting though that maybe, sadly, these old cook books were just very basic hieroglyphic recipes for meal preparation.
In fact, the oldest recipe in existence, according to experts is a collection of tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `exhilarated, wonderful and blissful`. During the time of the Roman Empire a man called Apicius compiled a collection of scripts describing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals were separated into starters, main course and desserts, something that is very familiar to us today. Aspicius also recounts how the early Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs such as bay, fennel and dill. In the fifteenth century, the Crusaders brought back many foods and herbs from the holy land, including basil and coriander. The introduction of these new foods and spices was responsible for an increase in recipe books, some of which still exist in private collections. Over the following few hundred years, the wealthy families of the West competed with each other to serve the most exotic meals, and consequentially the best cooks and their recipe collections were much in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and publishing popular recipes of the day. The introduction of television brought us cooking programs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everybody to access massive numbers of recipes just like those on this site. |
