The History of Recipes
Transcribed cooking instructions as a concept can be traced back into distant history, at least as far back into history as pharonic Egypt, and quite possibly further than that. Interesting though that maybe, mostly, these old recipes were just primitive hieroglyphic or cunieform instructions for preparing food.
Interestingly, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful. As we move into The time of the romans 25BC a man called Apicius created some scripts detailing recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals were split into starters, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the ancient cooks used a good variety of spices and herbs, including a few you will know like basil, mint and asafoetida. During the next few hundred years, the upper-class families of Europe competed to serve the best banquets, and consequentially the best chefs and their recipes were highly sought after. Nevertheless, it was during the 1800s the formal cooking and cookery books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, testing, and writing down recipes to help cooks of their time. By the time we get to the twentieth century, cooking books are highly popular due to better eduction, people having increased leisure time and being a little richer. |
